Limitations and good to know

• 'Curry' is a colonial-era catch-all covering many distinct cuisines that have little to do with each other; the list names traditions rather than pretending they are variants of one dish.
• Ingredient availability varies, and some styles depend on a spice or a fresh leaf that is genuinely hard to find.
